British farmers believe they have produced the most exclusive ever cheese - after making it from cows who have gorged only on the first cut of grass of the year.
Premier Moo cheddar is made in a similar way to the famous Premier Cru Champagne, which is produced from the first growth of grapes of the year.
Farmers in the West Country worked out that there is more protein and other rich substances like carotene in the grass in early spring than at any other time of the year.
So they let their dairy cows loose on the first graze of grass of the year, sending the herd into an ecstatic frenzy, for just a two week period before storing the milk in vats.
The premium milk was then churned into cheese before it was matured for 12 months to produce cheddar that apparently tastes subtler and sweeter than any other variety.
The colour is also unique. It is a dark yellow due to the high amount of carotene in the first crop of grass.
The packaging on the limited edition cheese boasts that it is 'made exclusively from first graze milk.'
The simple yet ingenious idea is the brainchild Mike Pullin at Ford Farms in Litton Cheney, near Weymouth, Dorset.
Mr Pullin said: "In my experience cheese made from milk from spring time is a lot tastier than at any other time.
"It is to do with the fact it the grass is higher in protein and has higher levels of constituents like carotene in.
"So I just thought that the best time to make the most of this is when the cows are let out for the first time so they graze on the first cut of grass.

The premium milk was then churned into cheese before it was matured for 12 months to produce cheddar that apparently tastes subtler and sweeter than any other variety.
The colour is also unique. It is a dark yellow due to the high amount of carotene in the first crop of grass.
The packaging on the limited edition cheese boasts that it is 'made exclusively from first graze milk.'
The simple yet ingenious idea is the brainchild Mike Pullin at Ford Farms in Litton Cheney, near Weymouth, Dorset.
Mr Pullin said: "In my experience cheese made from milk from spring time is a lot tastier than at any other time.
"It is to do with the fact it the grass is higher in protein and has higher levels of constituents like carotene in.
"So I just thought that the best time to make the most of this is when the cows are let out for the first time so they graze on the first cut of grass.
