Head chocolatier Stephen Glenister makes the final tweaks to Alice Jonsdottir Ferrier's 100% chocolate hat for Ladies Day at Ascot
MARC Patisserie creates dark chocolate hat, UK - 14 Jun 2016
To celebrate Ladies Day at Ascot, MARC Patisserie's head chocolatier Stephen Glenister has created a 100% solid, dark chocolate hat, to be worn (and then eaten) especially for the occasion. The hat, weighing 3kg, is made from 66% Ecuadorian origin chocolate, and combines an expert blend of floral jasmine and orange blossoms notes, with earthy and chocolatey tones. The melt in your mouth masterpiece, took a full 42 hours to construct and showcases a shimmering gold and red rose, that sits elegantly on top of the hat, with striking, splashes of colours across the brim.
To be worn by chocolate queen, Alice Jonsdottir Ferrier, on the day, the hat, like any other, was fitted prior to its creation and the crown magically moulded, to perfectly fit her head. However - whilst one size doesn't fit all - fear not chocolate lovers - it does feed all, so feel free to take a bite out of her brim should you see her pass you on the way home, post races!
