Ingenious catering entrepreneurs Sam Bompas and Harry Carr - founders of Bompas & Carr jellymongers - have courted criticism by releasing a controversial conserve: a jam made using a speck of the late Princess Diana's hair.

Created as a contribution for a surrealist exhibition at London's Barbican, the preserve - named 'Occult Jam' - was sold out within days, priced at GBP 5 per jar, and the jam could soon hit supermarket shelves.

The hair was bought on eBay for $10 from a US dealer who collects what he says is celebrity hair.

Bompas, who founded the company 3 years ago with schoolmate Parr, says the jam is made by infusing a speck of Diana's hair in gin, before turning it into a jam using milk and sugar, creating a product with a taste similar to condensed milk.

Diana fanatics are up in arms about the concept, feeling it dishonours both the late Princess and her living sons, Princes William and Harry.

Bompas acknowledges that some may find the jam's ingredients "a bit sick", but he hopes that it provokes people into thinking about what they put in their bodies.

The 'Occult Jam' range also features an absinthe-and-pineapple flavour infused with sand from the Great Pyramid and a plum-and-oak version made using wood from Nelson's flagship Victory.

Bompas & Parr are famous in the culinary world for their outlandish and visually stunning creations using jelly, such as moulds of St Paul's Cathedral.

    Chelsea pensioners .

    NEW BOY OF THE PENSIONERS
The Royal Hospital Chelsea, founded by King Charles II in 1862 “as a retreat for veterans of the regular army who had become unfit for duty, either after 20 years’ service or as a result of wounds”. Although there are no barracks, a certain amount of kindly discipline is maintained – a fact which these old soldiers actually appreciate. At present there are 367 Chelsea Pensioners, presided over by General Sir Cameron Nicholson, and new recruits give up their outside pension on entering the Hospital. In return he is provided with his board and accommodation, clothing, a pint of beer daily or tobacco in lieu. They purchase the summer red uniform for £15 and are expected to perform a few light duties, but the majority of the time is their own. The Hospital has much to offer with companionship high on the list. For the remainder of their days the old soldier has a place of comfort and friends with whom he can swap stories of campaigns. What more could a veteran ask for?

MOTHERS JOIN IN HONG KONG CHILDREN

Chinese mothers, babies slung from their backs, sign up to get their food - served by army volunteers - at the annual children's party given by the Hong Kong society for the protection of children. Besides helping with the food, army men took children for Jeep and pony rides. Nearly 1,500 mothers and children were given a hot meal, entertainment, and gifts.

Selected boy entrants to Britain's Modern Army, training at the Army Catering Corps Training Centre, will be fit for high appointment in the hotelier business when the army days are done. The boys, varying in age from 14 1/2 to 15 1/2, undergo a three year course before entering man's service, and are taught all branches of cooking, butchery and larder work, both in Barrack and field conditions. Education goes on to certificate standards, and their precision on the square denotes the high quality of their soldierly tuition.

LONDONERS LUNCH WITH THE GODS: MUSEUM MEALS AT POPULAR PRICES

British Restaurants, opened by the Londoners' Meals Service to provide good food at minimum prices, have appeared almost everywhere in London, from Park Lane to Putney, during the war. The strangest is at the Bethnal Green Museum, in the East End, where 1000 hot lunches can be served every day. Customers pay ten pence or a shilling in the hall, at a booth beside a bust of Garibaldi, the Italian patriot, and get their meal at a service counter, carrying it past a bust of Oliver Cromwell, Lord Protector of the commonwealth, to the central hall, where Venus, Goddess of Love, and Diana, Goddess of the Hunt, look down on the communal scene of Londoners lunching in classic surroundings.
