October 16, 2018 - Karabuk, Turkey - The saffron harvest has started in Turkey’s Black Sea town of Safranbolu which was named after the spice. The flowers of Crocus Sativus, commonly known as the ''saffron crocusâ€Â, is processed after the harvest. Saffron is the tiny red pistil which needs to be extracted from the heart of the purple flower. The pistil is meticulously extracted by village women flower after flower, and then dried. One gram of saffron is produced from 250 flowers of saffron crocus, and 10 grams of saffron requires 1,430 pistils. As a valuable agricultural product, one part of saffron is enough to colour 100,000 parts of water. One kg of saffron was sold to 30,000 TL in Turkey last year. It is widely used in Mediterranean countries, Iran, and Kashmir. It is a precious ingredient for meals of fish and rice, bread and pastry (FOTO: DUKAS/ZUMA)
