An ice that does not melt and can be used as biodegradable compost when finished with has been developed by researchers and is nearly ready for commercialisation.
The one-step process creates the cubes using gelatine.
Because this frozen jelly ice doesn’t leak as it thaws, it’s said to ideal for food supply chains and medication transport.
The cooling material jiggles and squishes at room temperature. But when cooled below the freezing point of water, 0 degrees Celsius, it transitions to a firmer, more solid state.
US-based researchers Jiahan Zou and Gang Sun from the University of California, Davis, who developed it were inspired after they were asked by a food scientist if it was possible to create a reusable alternative to regular ice.
The scientist raised concerns about the potential spread of pathogens at grocery stores, where they had seen seafood displayed on melting ice.
Zou and Sun took the idea from observing how vegan soy bean curd tofu freezes and thaws.
Frozen tofu keeps its water inside, but when thawed, releases the water.
Gelatine is food-safe and can retain water due to being composed of long strands that bind to form hydrogels with pores.

OPS: The galatine-based non melting ice cubes. They can be moulded into any shape and can even be sliced.

Rarely seen Red Hot Chili Peppers drummer Chad Smith, 63, grabs blended coffees to go as he enjoys a day out in Malibu. The popular musician, who has been married to architect Nancy Mack since 2004, famously had a “drum-off” with Hollywood actor Will Ferrell on The Tonight Show with Jimmy Fallon, in which Ferrell impersonated the rocker for a televised prank. For his outing on March 15, 2025, Chat looked casual in ripped black jeans, a Miles Davis T shirt and back to front baseball cap.
