OLD OIL-MILL WITH OX-POWER, ANSE UNION, LA DIGUE ISLAND, SEYCHELLES
A picture that could have been taken centuries ago: this oil-mill on La Digue is driven by one "ox-power." Coconut oil is extracted from copra, the dried flesh of the ripe coconut. The oil is used both for cooking and for rubbing into the skin. What is left after the oil has been squeezed out makes nutritious fodder for the livestock. (FOTO: DUKAS/MICHAEL FRIEDEL)
