COPRA PRODUCTION, NIAFO OU ISLAND, TONGA, POLYNESIA
Copra is the dried kernel of the coconut, from which coconut oil is extracted. In the coconut palm plantations, the extraction of oil from copra takes place in several stages. First the coconuts are peeled and split. The split halves of the coconut shells are then heated for about 24 hours in an oven or hot-room, in order to remove the moistness from the flesh of the kernels. After cooling, the flesh, now called copra, can be easily separated from the shells. The copra so obtained is then pressed in an oil-mill or further processed into dessicated coconut flakes.
